From ancient caves to cable cars, from historic sites to modern technology, Israel isn’t just a destination — it’s a country that keeps evolving, and the best way to feel it is to be here as it happens. It’s a place where history, innovation, nature, food, and culture collide in the most unforgettable ways.

When you’re walking around Israel, you’re not just visiting an archaeological site — you’re stepping into something deeper. It’s heritage, religion, and memory woven into the landscape. It’s a connection to our past that feels different from “just a site,” and you sense it the moment you’re there.

TRAVEL BY BUBBLE, ELEVATOR, OR TRAIN — JUST BECAUSE YOU CAN

Elevator to the beach? Yes please.

The Herzliya beach elevator (Netanya has one too!) is one of those small Israeli gems that instantly makes you smile. It glides down the cliffside from the promenade straight to the sand, giving you a full sweep of the Mediterranean as you descend. It’s simple, smart, and very “only in Israel” — take a long staircase, solve it beautifully, and suddenly everyone’s using it.

Haifa’s cable car is the same kind of magic. Within minutes, you float from the shoreline to the top of Mount Carmel, watching the ocean stretch out behind you. It’s public transit, but it feels like an experience — a reminder that Israel builds things that make everyday life a little more fun. 

And then there’s the train.

If you’ve been visiting Israel for a while, you’ve watched this high‑speed system rise out of the ground. Now it’s fast, clean, and incredibly easy. Fun fact: Jerusalem’s Yitzhak Navon Station is one of the deepest heavy‑rail stations in the world, about 80 meters (260 feet) underground.

When traffic gets bad — or just for the adventure — the train is absolutely worth it. With a central stop in Jerusalem, one at the airport, and three in Tel Aviv, we used it multiple times this trip.

ISRAEL BY FOOT

Knesset Museum: The Foundations of Israeli Democracy

Opened in 2023, the Knesset Museum sits on the site of Israel’s original parliament, which operated from 1950–1966. It’s a guided experience that must be booked in advance, and it walks you through Israel’s earliest decisions in a way that feels both clear and deeply moving.

You follow the story from the Declaration of Independence through debates about national culture, Jewish heritage, diaspora communities, equal rights, and democratic values — all the building blocks of Israel’s identity. You also see what Knesset members actually do and how laws like the Law of Return shaped the country’s future.

The museum highlights the choices that helped define modern Israel, like making school mandatory and setting the rules for how the government works. Standing in the place where Israel’s democracy began makes you feel proud of how far the country has come — and grateful for the vision that continues to guide it forward.

Oz Vegaon: From Memorial to Community Space

The first time I visited Oz Vegaon was in 2018, when Nadia Matar showed us around. The park was created in memory of the three boys—Gilad, Eyal, and Naftali—who were kidnapped in 2013, an event that helped trigger the war in Gaza. Back then, it was just beginning: wooden panels with quotes from the Torah and from Zionist figures like Trumpeldor, Jabotinsky, and Rav Kook. Those panels still stand today.

Now the area is full of playgrounds, a food truck, and families everywhere. It’s another example of “if you build it, they will come.” But it’s also something deeper: a memorial that has turned into a place overflowing with life. Kids laughing, parents chatting, people gathering — a quiet reminder that life continues, that we live on for them, and that creating spaces of joy is its own way of honoring memory.

City of David: Not Just Seeing History — Walking Through It

The City of David is one of the most important archaeological sites in Israel—this is ancient Jerusalem, long before the Old City walls existed, and the place where King David established his capital. Instead of just looking at ancient remains, you actually walk through them: preserved structures, narrow passageways, and even an ancient toilet installation that shows how people lived thousands of years ago.

Hezekiah’s Tunnel, built about 2,700 years ago, is a major engineering achievement. Two teams carved through solid rock from opposite sides of the mountain and met perfectly in the middle, creating a water channel that brought spring water safely into the city. Walking through the tunnel—water up to your calves or knees, flashlight in hand—isn’t for everyone, but it’s a unique, rewarding way to experience history from the inside.

The Eighth Note- Beit Guvrin Light Show

Carved by ancient workers during the Hellenistic and Roman periods, these massive caves were created as underground quarries. This practical solution turned into one of Israel’s most extraordinary archaeological landscapes.

A year ago, they opened an incredible light show here, and it’s unlike anything I’ve ever seen. With music and video‑mapping, the caves shift in color and sound as you walk through them, turning the underground space into a living, glowing experience.

THE FOOD- OH, THE FOOD!

I actually remember when the food in Israel was terrible. Restaurants offered a limited number of dishes; variety was scarce, and the French fries were consistently soggy and undercooked. Today it’s a completely different story. Israel is full of excellent restaurants, and Israeli cuisine has spread worldwide.

In fact, the classic shipudiya—once the standard everywhere—has become harder to find. We visited two that we are still talking about.

1. Itzik Hagadol — Yafo

Itzik Hagadol sits in Jaffa, an area that used to feel run‑down but is now genuinely beautiful to walk through.

The standout here is the salads: dozens of small bowls in every color, each packed with flavor. Even a single spoonful is enough to appreciate how good they are. This is a shipudiya worth stopping for. The entrecôte skewer—served simply, no gimmicks—is perfect.

2. Steakiya

Thanks to Asaf Granit, Steakiya is one of those classic yet elevated shipudiyas that just gets everything right. The grill is front and center, the skewers come out perfectly seasoned, and every plate feels like comfort food done well. The ambience is exactly what you want from a spot like this — lively, casual, a little smoky from the grill, and full of people who clearly came hungry.

It’s the kind of place where the salads hit the table fast, the laffa is warm, and the meat is the star. Nothing fancy, nothing overthought — just great food, great energy, and that unmistakable Israeli shipudiya vibe.

UNFINISHED ON PURPOSE

Usually when you visit a place, you check it off your list and move on. But with Israel, the more I visit, the longer my list becomes. New excavations appear. New national parks open. New workshops pop up in small towns. New restaurants become must‑tries. Israel doesn’t shrink the more you explore it — it expands.
